THE SPINACH STUDY

“In 1997 UCLA (University of LA) conducted a study of the effects of iron. They had a sample of spinach grown back in 1953. Several women were reported as being anemic even though they were supposedly eating a lot of spinach salads.
So they compared samples of spinach from 1997 with that grown in 1953. It was concluded that to equal the nutritive value that 1 bowl of spinach had in 1953 we would have to eat 43 bowls of spinach in 1997. Not only was the spinach deficient in iron, but other minerals as well. As a consequence, when we do not have sufficient minerals in our system, the body cannot use the vitamins. This creates a lack that increases over time, which then results in health problems.
The UCLA study showed: “Spinach’s potassium content had dropped from 1953 to 1997 by 53 percent, its phosphorus by 70 percent, its iron by 60 percent, and its copper by 96 percent.”
These results allow us to assume that, if the same study was conducted today, in 2023, the mineral deficiency would have grown substantially due to the extremely increased pollution in the world, industrialized farming, fertilization techniques, as well many other factors. Unfortunately, if not a drastic change, it will get worse.
